Raw Broccoli and Cranberry Salad Recipe

Broccoli and Cranberry Goodness

I found this delicious salad in the Revive Café Cookbook Edition 6 by Jeremy Dixon. I made it over the Christmas period and it went down well.

Preparation time: 30min
Serves: 2 to 4

Salad Ingredients

  • 3 cups broccoli sprouts cut into small pieces
  • ½ cup of dried cranberries
  • ½ cup of finely chopped onion
  • Sliced almonds to garnish

Dressing Ingredients

  • ¼ cup orange juice
  • 2 tbsp of lemon juice
  • 3 tbsp of tahini
  • ¼ tsp salt
  • 2 cloves of crushed garlic

Directions

Add all the broccoli, red onions and cranberries into your salad bowl. I use a glass jar to mix the dressing in. Once all the dressing is well mixed, pour over the salad and allow 30 minutes so that it soaks into the broccoli. I toasted the sliced almonds and once cool, sprinkled them over the salad. Enjoy!

Nutritional Benefits

Broccoli is one of my favourite vegetables. It’s high in vitamin A, C and K, folate, minerals (potassium, magnesium, calcium, phosphorus) and fibre. It also contains sulforaphane, which is believed to be protective against cancer.

Ladies, something you may be interested in is that vitamin C promotes the production of collagen and a cup of broccoli provides a good dose of vitamin C. This may help in promoting healthy skin and bone health. Aim to have a good dose of broccoli as often as you can.
