Chicken Liver Stir Fry

In Chinese medicine, winter is the time to take care of your adrenal glands. Adrenal glands are found just above your kidneys and help you to respond to stress appropriately. They may be small but they make and release many hormones that circulate through your blood and influence many aspects of your health.

If your energy levels are under par, you sleep poorly, feel anxious and/or experience brain fog, your adrenals are likely needing some love. Other symptoms that you may experience are cravings for sugar and salty foods.

The reason I have chosen liver is because it is a nutrient dense source of activated B vitamins, which will support your energy levels. Other foods that support adrenal health are high quality proteins, good quality fats such as avocados, sea salt, organic vegetables and fatty fish.

Ingredients

  • 500 grams of organic chicken livers cut in 2 to 3 cm pieces
  • 2 tbsp of coconut oil
  • 1 large onion sliced
  • 5 cm piece of fresh grated ginger
  • 2 cloves crushed garlic
  • 1 tsp turmeric
  • 1 cup of sprouts of choice
  • 3 tbsp of coconut sauces
  • Optional: 6 shiitake mushrooms

Directions

Heat the coconut oil over a medium-high heat and sauté the liver until browned. Remove the liver from the pan and add in the onions. Cook over medium heat until slightly softened (add in additional oil if needed). Add in ginger, garlic and turmeric (optional shiitake mushrooms) and cook for a further three minutes. Add the liver back in together with the sprouts and coconut soy and heat on high for a couple of minutes.

Chicken livers are a great source of A, B, C vitamins, zinc, copper, manganese, iron, phosphorus and selenium.

Onions are a good source of vitamin, B1, B6, C, K, biotin, chromium and fibre. They are great for the immune system and are anti-inflammatory in nature.

Garlic contains allicin, which is a potent antioxidant that reduces oxidative damage to our cells and supports our detoxification systems. It also inhibits the growth of a variety of bacteria, yeast and viruses.

Ginger is a powerful antioxidant and anti-inflammatory that may help to boost our immune health.

Turmeric has anti-inflammatory properties and protects our cells from DNA damage.

Shiitake mushrooms contain essential amino acids (building blocks for protein) and are believed to boost immunity.
