Release the Power of Beetroot
This delicious and warming soup is packed with detoxifying ingredients that support liver health and enhance the body’s natural detoxification processes.

Ingredients
- 2 medium beets, peeled and diced
- 1 bunch kale or spinach, washed and chopped
- 1 large carrot, peeled and diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric powder
- 4 cups vegetable or chicken broth
- Salt and pepper to taste
- Juice of 1/2 lemon
- Fresh parsley or coriander for garnish
Directions
In a large pot, heat the olive oil over medium heat. Add the onion and garlic, sautéing until they are soft and fragrant.
Add the diced beets, carrot, and spices (cumin, coriander, turmeric). Stir well to coat the vegetables with the spices.
Pour in the broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 20-25 minutes, or until the beets and carrots are tender.
Add the chopped kale or spinach to the pot and simmer for another 5-10 minutes until the greens are wilted and tender.
Season with salt, pepper, and lemon juice to taste. Can blend if preferred.
Serve hot, garnished with fresh parsley or coriander.
